Raw Plantain Fritters/ Aratikaya Bajji


This is a south Indian snack recipe. Quick preparation and very tasty.
This is one of my family's weekend snack item. I usually make Bhajji's
with potato, Brinjal, Chinese Okra/Beerakaya/Ridge Gourd. Today i made
with Raw Plantains. It turned out delicious.

Ingredients:

2 Plantains peeled and sliced thinly into desired shapes
1 cup of Besan flour(Chana Flour)
1/4 cup rice flour
1/4 tbs baking soda (optional)
1 tbs cumin seeds
Red chilly powder to taste
Salt to taste
Water to make smooth batter
oil for deep frying.

Preparation:

1. In a Big bowl mix besan flour, rice flour, salt, red chilli powder,cumin 
    seeds, baking soda and add little water to make a thick smooth paste.
2. Heat oil for deep frying in a heavy bottomed vessel. Dip the sliced
    plantains into batter and slowly drop them into hot oil.
3. Fry them until they change the color and remove with a slotted spoon.
4. Now take the paper napkin and takeout the excess oil with paper napkin.
5. Serve hot with ketchup or chutney.

Bhelpuri - Evening Snack



Bhelpuri is identified as a popular evening snack. Bhelpuri is a low-fat 
and delicious evening snack. It's a famous North Indian fast food item.

Ingredients:


1 Cup Bhelpuri Mix
3-4 tbs mashed potato
1/2 Chopped onion
3/4 Chopped Tomatoes
2-3 Chopped Green chillies
3-4 tbs Mint chutney
3-4 tbs Tamarind paste
3-4 tbs Chopped coriander


Preparation:


1. Boil the potatoes and mash them.
2. Take a big bowl and add Bhelpuri mix.
3. Add mashed potato, onion, tomato, mint chutney, tamarind chutney,

    green chillies and mix gently with the hands.
4. Finally garnish with chopped coriander before serving.
5. Bhelpuri is ready to serve.

SEMIYA PAKORA


One of my friend padmaja gave me this recipe recently. Thanks to padmaja.
I tried your recipe and it was fabulous. Since so many vegetables are used in it,
it can be considered as very healthy too.

Ingredients:

1Cup Boiled Semiya
2 Cups Cut & Boiled Vegetables (Carrot, Beans, Cabbage, Green peas)
1/2 Cup Chopped Onions
2 tbs Green chillies
1 tbs Ginger
1tbs Garlic
1 tsp Salt
1 tsp Red chili powder
1tsp garam masala
10 Curry leaves
2 tbs chopped coriander leaves

It slows ageing, promotes healthy vision, has anti-cancer properties,
increases immunity towards various chronic diseases. Eating carrots can
cure anaemia, eye problems and cancer too.

The advantages of carrots:

They reduce the risk of cancer. They stimulate the immunological system.
They alleviate respiratory and digestive problems. They help in the prevention
and treatment of ulcers. They strengthen the teeth, hair and bones.
They contribute in the lactating period of women. They improve skin

Health Benefits of Green Beans:

Green beans are an excellent source of manganese, and vitamins K and C.
They are very good source of dietary fiber, potassium, iron, folate, and

riboflavin, thiamin, niacin, and copper. Glycemic Index (GI)In a study
to determine the estimated GI of various foods, it was concluded that
green beans have a low GI of 15. Bone Health Green beans and other
green vegetables are a very good source of vitamin K, which plays an
important role in bone health and the prevention of osteoporosis.
Several studies have demonstrated that vitamin K deficiency is
associated with low bone mineral density, and an increase in bone
fractures. Vitamin K supplementation and an increase in consumption
of vitamin K rich foods such as green beans have been shown to
improve bone health. In one 3-year double blind placebo controlled
study, 181 healthy postmenopausal women showed reduced bone loss
of the femoral neck after vitamin K supplementation.

record of helping to reduce the risk of age-related macular
degeneration and cataracts.

Preparation:

1.Take a pan. Add water & semiya and cook till done. Strain the excess water.
Keep it aside.
2.Take a vessel and add water,vegetables cook till done. Strain the excess water
and keep those boiled vegetables aside.
3.Wait till the semiya and boiled vegetables are cool. Then take semiya ,
vegetable, ginger, garlic paste, salt, red chili powder, garam masala,onions,
green chillies, curry & coriander leaves mix well.
4.Now add 3 tsp each Corn flour and besan flour for binding
(Add both powders equally if you want more you can add).
5.Heat oil in a deep frying pan.Take a small portion of the mix at a time
and drop it in hot oil. Fry till golden brown. Serve with chutney or ketchup.

ONION PAKORA



Ingredients:


2 cups of besan flour
1/2 cup of rice flour
6 onions
4 green chillies
1 tsp chilly powder
curry leaves
salt to taste
oil for frying.


Preparation:

Thinly slice the onions and then mix all the ingredients with 3tbs oil, mix well.
Add water to get a thick paste. Heat oil in a deep frying pan. Take a small portion
of the mix at a time and drop it in hot oil. Fry till golden brown.
Serve with chutney or ketchup.

PAV BHAJI

Ingredients:

Pav buns:12

Onions:2

Tomato's:2

Carrots: 1/2 cup

Beans:1/2 cup

Potatoes:1/2 cup

Cauliflower:1/2 cup

Green peas:1/2 cup

Ginger & garlic paste: 3 spoons

Turmeric: 1/2 tbs

Pav Bhaji masala Powder:1 & 1/2 tbs

Red chilly powder: 1/2 tbs

Salt to taste

1 tbs butter

1/4 cup finely chopped onions

1/4 cup chopped fresh cilantro

1 fresh lemon.

Preparation:

Cook all the vegetable in a pressure cooker. Don't add to much of water while cooking. After the vegetable are done, drain and mash them coarsely. Heat butter or oil in a pan add onion and ginger,garlic. When onions turn brown then add tomatoes. Continue frying till it turns soft.
Now add pav bhaji masala,salt,termaric,chilly powder and fry for couple of minutes. Now you can add the mashed vegetables. Turn up the heat and continue stirring till everything is well
incorporated. Take of the stove when the bhaji is thick. Cut pav's in half horizontally and lightly coat it with butter. Roast them on hot griddle just before serving.

Garnish bhaji with Cilantro,chopped onions, and a thin wedge of lemon....

MOONG DAL MURUKU



Ingredients:


1 Cup Moong Dal

4 Cups Rice flour

2 tbs Cumin Seeds

1 & 1/2 tbs salt

1 & 1/2 tbs chilly powder

Water: Sufficient

Oil: for frying



Preparation:


  • Take 1 cup of Moong Dal add 3 cups of water put it into cooker. Cook well like dal.

  • Add the rice flour into bowl, cooked moongdal, Cumin Seeds, Salt, Chilly powder mix well.Mix by adding water and make a smooth dough like roti dough.

  • Heat oil in a deep frying pan.Fill the muruku mould with dough and press the dough in the oil in a circular manner to form a muruku.

  • Deep fry till golden brown and crunchy.Remove the muruku from heat, draining the excess oil on a tissue paper.

  • Cool and preserve it an air tight container.
