Mamidikaya Pulihora/ Green Mango Rice


Mamidikaya pulihora is a traditional dish prepared mostly as Prasadam 
(Offering to God). On the occassion of Ugadi festival we celebrate the 
season's fresh produce of mangoes by preparing Mamidikaya Pulihora 
(green mango rice), a south Indian rice delicacy.  
Serves:3, Preparation Time: 30 min.

The green Mango is a valuable source of Vitamin C. It contains more 
vitamin C than half-ripe or fully ripe mangoes. It is also a good source of
vitamin B1 and B2 and contains sufficient quantity of niacin.

Health Benefits of Green Mango/ Unripe Mango:


1.The green mango/unripe mango protects men from the adverse effects of

    hot, scroching winds. A drink, prepared from the unripe mango by cooking 
    it in hot ashes and mixing the pith with sugar and water is an effictive remedy 
    for heat exhaustion and heat stroke. Eating raw mango with salt quenches
    thirst and prevents the excessive loss of sodium chloride and iron during 
    summer due to excessive sweating.
2.The green mango is valuable in blood disorders because of its high vitamin 
   C content. It increases the elasticity of the blood vessels and help the forma-
   tion of new blood cells. It aids the absorption of food-iron and prevtns bleed-
   ing  tendencies. It increases body resistence against tuberculosis, anemia, 
   cholera and dysentery.
3. Unripe mangoes are an excellent fruit remedy for bilious disorder. The 
    acids contained in the green mango increase the secretion of bile and
    act as intestinal antiseptic. Therefore, eating green mango daily with honey
   and pepper cures biliousness, food putrefaction i.e when proteins are 
   decomposed by bacteria; urticaria and jaundice. It tones up the liver and 
   keeps it healthy.
4.The amchur, a popular article of diet in indian houses, consists of green 
    mangoes skinned, stoned, cut into pieces and dried in the sun. 15 gm. of
    it is believed to be equivalent to 30 gm. of good lime on account of its citric 
    content. It is valuable in the treatment of scurvy.

Natural Benefits of Green Mango:



1. Green mangoes are highly beneficial in the  treatment of  night blindness 
    in which one  cannot see properly in dim light. This disease is caused by 
    vitamin A deficiency. Eating mangoes liberally will also prevent develop-
    ment of refractive errors, dryness of the eyes, softening of the cornea, 
    itching and burning in the eyes.
2. The mango-milk cure is an ideal treatment for loss of weight. For this 
    mode of treatment, ripe and sweet mangoes should always be selected. 
    They should be taken thrice a day-morning, noon and evening. The man-
    goes should be taken first and then followed by milk. Mango thus combine 
    very well with milk and exclusive mangomilk diet taken for at least one month, 
    will lead to improvement in health, vigour and gain in weight. The quantity 
   of milk and of the mangoes to be consumed in this mode of treatment should 
   be carefully regulated according to the condition of the patient. For rapid gain 
   in weight, about 4 to 5 litres of milk should be consumed with 3 to 4 kg. of 
   mangoes.
3. The tender leaves of the mango tree are considered useful in diabetes.
    An infusion is prepared from fresh leaves by soaking them overnight in 
    water and squeezing them well in water before filtering it in the morning. 
   This infused water should be taken every morning to control early diabetes. 
   As an alternative to infusion. Leaves can be dried in the shade, powdered 
   and preserved. Halt a teaspoonful of this powder should be taken twice a 
   day, in the morning and evening.
4. The mango seeds are valuable in diarrhea. The seeds should be collected 
    and dried in the shade and powdered and stored for use as medicine. It 
    should be given in doses of about one and a half gram to two grams with 
    or without honey. Juice of fresh flowers when taken with one or two tea-
    spoonful of curds, is also valuable in diarrhea.
5. The mango bark is very efficacious in the treatment of throat diseases. 
    Its fluid is locally applied and also used as a gargle. The gargle is prepared 
    by mixing 10ml. of the fluid extract with 125ml. of water.
 
Precaution:

Water should not be drunk immediately after eating the green mango 

because it coagulated the sap and makes it more irritant.
 
Ingredients:

1 Cup cooked white rice
1 cup peeled and grated raw green mango
1 tbs channa dal
1 tbs urad dal
1 tbs mustards
8-10 curry leaves
3 Red chillies
3-4 Green chillies
Salt to taste
1/4 tbs hing
3 tbs Peanuts

3 - 4 tbs Oil
 

Preparation:

1. Heat oil in a pan. Add channa dal, urad dal and let them turn into light 
    brown color. Now add the red chillies, green chillies, turmeric and mustard. 
    When mustard start splutter add curry leaves, hing and  fry for a min.
2. Now add peanuts and fry for 5 min.
3. Add  the grated mango and stir fry it for 5 min.
4. Finally add the cooked rice and combine well with adding salt.
5. Delicious and tangy Mamidikaya pulihora/ Mango Rice is ready to serve.

Bisi Bele Bath

 
Bisi Bele Bath is a traditional karnataka dish. Bisi Bele Bath is made with rice,
toor dal, tamarind, vegetables and Bisi Bele Bath masala powder.
 

Ingredients:

1&1/4 cups of  rice
3/4 cups of Toor dal
2 carrots (1 & 1/2 Inch Pieces)
10-15 string beans (1 & 1/2 Inch pieces)
1/2 green pepper (1 Inch pieces)
4 - 5 tbs MTR Bisi Bele Bath powder
1/4 tbs turmeric
Salt to taste
Red chilli powder to taste
1/2 tbs mustard
1/2 tbs cumin
A pinch of hing
2 Red chillies
2 - 3 tbs ghee
Tamarind size of a lime
10-15 Pieces of cashew nuts
coriander leaves for garnishing

 

Preparation:

1. Wash the rice and toor dal thoroughly. Place it in a container with 4 &1/2 cups
of water and chopped vegetable.
2. Soak the tamarind in  hot water about 30min. Take out the tamarind pulp 
from tamarind and keep it aside.
3. Heat ghee in a pan.  Add red chilly pieces, mustard, cumin, turmeric, hing and 
cashew nuts fry for a min. When mustard start splutter add the tamarind juice, 
salt and mix thoroughly for 10 min.
4. Add the red chilly powder, Bisi Bele Bath powder and mix well.
5. Add the cooked rice, dal and vegetables. Stir well with adding water
to 
desired consistancy and cook on low flame  for 8min.
6. Finally garnish with coriander leaves.
7. Delicious and mouth watering Bis Beli bath is ready to serve with potato chips.

Tip: MTR Bisi Bele Bath powder helps me to reduce the time to cook the 

        Bisi Bele Bath.

Tomato Rice - Lunch Box Recipe

 

Tomato rice is a simple South Indian recipe. We can prepare this recipe with
leftover rice/Fresh rice. This recipe is a well known lunch box recipe.

Ingredients:

1 Cup Rice
3 Tomatoes
1 Medium Onion
4 - 5 Green Chillies
Red Chilly powder to taste
1/4 tbs turmeric
1/2 Inch Ginger
2 flakes garlic
2 Cloves
1 piece cinnamon
2 cardamons
2 tbs oil/butter/ghee
Coriander leaves for garnishing.

Preparation:

1. Cook the Basmati rice and keep it aside. Allow it too cool.
2. Heat oil in a pan, add cloves,cinnamon, Cardamom and fry for a minute.
3. Add ginger, garlic, green chillies and fry for a min.
4. Add onions and green chillies fry till the onions turn into light brown color.
5. Add Chopped Tomatoes, Salt, turmeric and cover to cook on medium heat.
6. After tomatoes are cooked well, add red chilly powder and mix well.
7. Finally add cooked rice and mix well.
8. Garnish with Coriander leaves.

Vanghi Bhath / Brinjal Rice / Egg plant Rice




Today i am posting mouth watering vanghi bhath recipe. Vanghi bhath Serve
hot with yogurt or raitha. 

Ingredients:

1&1/2 cup Basmathi rice, (Washed and Cooked)
1 tbs Channa dal
1 tbs Urad dal
3 Red chillies
1 tbs Mustard
1 tbs Cumin seeds
3 to 4 tbs vanghi bath powder

4 tbs Coconut Powder
salt to taste
Red chilli powder to taste
1/2 tbs asafoetida/Hing
1/4 tbs turmeric
8 curry leaves
4 to 5 tbs Chopped Coriander
15 cashews
3 - 4 tbs oil
1 onion
3 Brinjals / Egg plants

Preparation:

1. Heat oil in a pan. Add Channa dal, Urad dal, Mustard, Cumin seeds, Red               chillies,Turmeric, Hing, Curry leaves, Cashews stir it till the seasoning is done.
2. Add the Sliced onions and fry till the onions turn into light golden brown.
3. Add the sliced brinjal pieces, salt and fry until brinjal is cooked.Cover to cook 

on medium heat.
4. Add vanghi bath powder and red chilli powder and combine well and cover to

cook on medium heat up to 8 min.
5. Now add the cooked rice and mix properly.

6. Finally garnish with chopped coriander.
7. Mouth watering  vanghi bath is ready to serve.

OATMEAL







Health is wealth. Live like a healthy person, better to eat healthy foods and eat
more vegetables & fruits. Now a days lots of people are suffering with cholesterol.
If you want to reduce your cholesterol!!!!! Everyday better to take 1/2 cup of
oatmeal and one cup of curry and one cup of dal and yogurt. i.e sufficient for lunch/dinner.

The real stuff is the plain oat flakes from Quaker Oats or a similar brand.

The benefits of oatmeal are due to the fact that it's made from oats and oats are
a good source of both soluble and insoluble fiber. Oatmeal does not go through
any form of refined processing, which makes it an integral food because it does
not lose any of its nutritional value.


Ingredients:

1/2 Cup Plain oat flakes.
1 Cup water

Preparation:


1.Take a vessel add one cup of water. When water is boiling add oat flakes into

Vessel and mix well.

2. After 5 min your oatmeal is ready to eat.


Nutritional and Health Benefits of oatmeal:

Buildup of the body:

Oatmeal is full of proteins and minerals that help the body to build strong bones

and teeth as well as strengthen the connective tissue and stimulates

energy in general. Besides this, it also has a high content of calcium and

phosphorous. It is easy to digest and this is why it is considered a good food

for convalescing people, especially for women in postpartum situations since

it supposedly tones the uterus. It is known to strengthen the nervous system

and has tranquilizing and relaxing effects. Some studies have shown that these

effects happen to people that suffer the symptoms of smoking abstinence for

a long time, as well as with tranquilizers, medication or antidepressants.

A traditional way to overcome insomnia is by sleeping over a pillow

or in a mattress full of oatmeal.


The digestive connection:


Oatmeal contains a soluble fiber that acts in diverse ways on the digestive

apparatus. It gives volume to a diet, which improves the digestive process

and avoids and alleviates constipation. Oatmeal also helps to soften the

digestive tract, particularly for people that have gastritis and irritable intestine

syndrome. Besides this, since it drags the rest of the food on its way through

the intestines, eating it can be advantageous for preventing stomach cancer.

Oatmeal reduces the absorption of sugar in the blood and at the same time

is really good for diabetics. On the other hand oatmeal helps to improve

moody states in people. This is pretty useful when these mood swings

are part of PMS since oatmeal is able to stabilize the levels of estrogen and

diminishes liquid retention.

One of the most significant advantages of oatmeal is that it helps to maintain

good cardiovascular health. The soluble fiber that it has helps to reduce

cholesterol and elevates cardiovascular health by diminishing arterial

hypertension. Oatmeal also contains high levels of oatmeal, which is essential

for the formation of red blood cells whose function is to bring oxygen to

the body, and it also avoids anemia that occurs when there is a lack of iron

in the body, particularly for women that have difficult menstrual cycles.


Selecting, storing and using:


Choose oatmeal flakes or oatmeal flour instead of getting the instant kind.

Store the oatmeal in a fresh place, away from the sunlight, preferably in

hermetic container and use it as soon as possible. Don’t use it anymore

if three months have gone by.


Oatmeal can be eaten raw or cooked and oatmeal with milk or water is

most known recipe. Besides this you can also add fruit juice to it.

if you add any fruit to it, it will turn into a super nutritious food and can be

used as an agent to thicken a large array of cooked recipes.

VEGETABLE FRIED RICE


Vegetable Fried rice is a great dish for beginner cooks. Its colourful and tasty....

Ingredients:

6tbs oil
2 tbs ghee
1 medium onion
1/2 green pepper (capsicum)
1/4 cup beans
1 carrot
1/4 cup green peace
10 cloves
5 cardamom's
6 peaces Cinnamon
6 green chilli
2 cups basmati rice
4 cups water for rice cooking
3tbs ginger
3tbs garlic
salt to taste
5 tbs cashew nuts peaces for decoration
coriander leaves for decoration.


Preparation:


  • Wash and soak the rice at least 15 min. Now take the rice cooker.
  • Add the Basmathi rice and water. Add 1 tbs oil and mix well. 
  • After cooking the rice, take out the rice from rice cooker and put it into big tray.
  • Heat oil In a pan , add cloves, cinnamon and fry for a minute.
  • Add ginger and garlic fry for a minute.
  • Now add onions, sliced green chillies. Fry until it will be turn in to light golden brown.
  • Add vegetables and fry for about 10 min until a little tender.
  • Make cardamom powder. Add cardamom powder and salt.
  • Now Mix the fried vegetables into rice tray.
  • Take a small frying pan add 2 tbs of ghee add cashews. Fry for 2 min.
  • Finally decorate with coriander leaves and cashews.

LEMON RICE



Serves:3, Preparation Time: 30 min



Ingredients:

1Cup rice
4 tbs Oil
1tbs Channa dal
1tbs urad dal
1 tbs mustard seeds
A pinch of asafoetida
1/4 tbs turmeric
2 dried red chillies
2 green chillies
10 - 12 curry leaves
15 Peanuts/15 cashew nut peaces
1 lemon
2 cups water for rice cooking.



Preparation:

  • Cook rice with 2 cups of water. keep it aside.
  • Heat oil in a pan. Add red chillies broken into 2 peaces.
  • Add Channa Dal, urad dal, peanuts and mustard's, green chillies.
  • Fry until dals change colour into light brown.
  • Now add asafoetida.
  • Let mustard seed crackle, then add curry leaves.
  • Mix turmeric powder in this. Stir fry for half a minute.
  • Now add rice, salt, lemon juice mix well.

KICHIDI


Kichidi is good for health. Because kichidi is made with Moong dal, rice, vegetables and very less oil. It is also nutritious providing right balance of Carbohydrates, proteins and vitamins.It is so simple to make and is very tasty.

Ingredients:


1 cup of rice
1/2 cup moong dal
3/4 cup vegetables (if you like mixed vegetable you can use them or else use Potato,beans,carrot,peace etc...)
3 green chillies ( if your kids don't eat spicy food then don't use the chillies)
salt ( to taste)
1/2 tbs cumin seeds
1/2 tbs mustard
Pinch of hing
little bit of curry leaves
little bit of coriander leaves
2 tbs butter or oil
Water 2 1/2cups


Preparation:

  • Take a bowl and add rice, dal, vegetable. Add 2 1/2 cups water. Put it into pressure cooker.
  • Heat oil or butter in a pan add mustard seeds, cumin seeds, hing, curry leaves, green chilly peaces for tadka/tiragamata/popu.
  • When all the seeds turn into golden brown then add turmeric .
  • Once pressure cooking of rice,dal and vegetables is done add them to tadka/tiragamata/popu and Mix well.
  • Finally add salt. And decorate with Chopped coriander leaves.

SPINACH, CARROT PULAV






Kids like to eat Spinach Carrot Pulav. Its very tasty and good for health.

Ingredients:

Basmati Rice - 1Cup
oil -2 tbsp
Onion - 1/2 med, finely sliced
Fennel Seeds - 1 tsp
Black cardamom - 1
Cinnamon Stick - 1 peace
Cloves - 1
Green Cardamom - 1
Bay leaf - 1
spinach - 1 bunch/ chopped(2 cups)
Carrots - 2, grated
Water -2 cups
Red chili powder to taste
Salt - to taste.

Preparation:

Wash and soak the basmati rice for at least 1/2 hour.

In a microwave-safe dish which is at least 4 deep and holds at least 4-5 cups, add oil,fennel seeds, onions, Big cardamom, cinnamon stick, Green cardamom, Bay leaf and cloves, Mix well.

Microwave uncovered for 3 minutes.
Add in the chopped spinach and the Grated carrots. Mix Well and microwave for another 3minutes, uncovered.

Drain the water from the soaked Rice and add it in the bowl. Add salt, Red Chili powder and 2 cups water. Mix well and cook covered for 15 minutes, stirring and checking every 5 minutes.

Let the Rice stand for a few minutes before you fluff it up with a fork. Serve hot with Raita, Yogurt / pickle. serves 2.
